70cl / 64.3% / Signatory – A 2006 Orkney single malt, bottled exclusively for The Whisky Exchange by indie bottler Signatory Vintage, that was made at an undisclosed distillery on Orkney and matured in a refill sherry butt for 16 years. Aromas of charred apples, barbecue sauce, chocolate, smoky charcoal, tar and roasted peppers fill the nose, followed by notes of ripe orchard fruit, tar, black liquorice, oak spice, black pepper, candied lemon, dark chocolate and thick wood smoke throughout the palate.
